FUN FRIDAY--MUG CAKES
My week's attempts...
I enjoy baking and I’m trying to eat more protein these days, so I’ve been experimenting with mug cake recipes that involve protein power and/or cottage cheese. I wish I could give you THE recipe, but I haven’t found it yet. What I can tell you, is that it’s fun to try.
I’ve had some not-so-great turnouts. This one made me laugh. Too much cottage cheese in my opinion. Did I taste it anyway? Well, yes. I made it, so I had to try.
This one came closer, but isn’t quite there.
I know that trying to do low sugar, increased protein is going to change the flavor. I get it. But there has to be a recipe that comes close to tasting okay. I’ve gathered quite a collection of recipes, but since they aren’t on standard recipe cards, they are difficult to share. Plus, I haven’t tried a lot of the recipes yet. I’ve tried 4 this week and none of them are ones that I feel comfortable sharing. The idea still is fascinating—a mini cake in a mug cooked in the microwave for 90 seconds? Yes please!
If you have a super mug cake recipe you’re willing to share, feel free to message me or post it if you’re comfortable. In the meantime, I’m going to keep enjoying this process because I bought cottage cheese from Costco, so I have a “little” bit of it to work with.

Marci, one of the joys of this post is that it celebrates experimentation rather than perfection. So much of cooking, baking, and even healthy living is presented as though success should arrive on the first attempt, when the reality is usually much messier and much more entertaining. I smiled at your commitment to tasting the cottage-cheese-heavy version simply because you made it; that feels like the kind of optimism every good kitchen adventure requires. Thank you for sharing both the successes and the spectacular near-misses. The search for the perfect mug cake may still be underway, but your willingness to keep trying reminds us that curiosity can be just as satisfying as the final recipe.
